Steamed Egg with Milk and Banana 香蕉牛奶炖蛋


I was in the mood for dessert tonight, since I was given order by doc to stay home for few days, homemade dessert is the best option I had right now.

So I checked up the fridge, found some milk, eggs and bananas... Just the right ingredient I need for making some steamed custard!

So I referred to my favorite Christine's website and made this banana egg milk custard. It's so easy that it only takes 15min from scratch.



Seen here, the ingredient - 250ml fresh milk, 2 eggs and 2 table spoon of sugar (and 1 banana not in pic). I reduced the sugar instead of 30gm as suggested.

Subsequently I used only 1 table spoon of organic raw sugar, it tasted nice and smooth too. So moving forward I'll opt to use brown sugar or organic raw sugar only for better health benefit.



The egg mixture and the sliced bananas. I whisked the eggs vigorously using a fork then add milk & sugar, only took a good 30 seconds or so.


I used this sift to filter the bubbles in order to achieve the super smooth texture. Pour slowly to avoid overflow and lightly press with a spoon if need to (optional)


Put on the cover (or use a plate instead) onto each bowl and they are ready to enter the steamer. Make sure the water is boiling before you put them into steamer, starts timer right after you close the lid. As seem here, I used a Wok to do the steaming.



Ta da, my super smooth egg milk custard is ready after 12 minutes of steaming (you have to open lid every 4 minutes to let the steam escape, this is the key to ensure a smooth texture).

This is the original version for my big guy.


The banana version for my 15 months old (even lowered sugar content). The steamed banana is so sweet and soft, there's no fear of chocking at all.


It's yummy when serve hot, can taste the freshness of milk and egg in each bite.. I kept a bowl in the fridge for tomorrow cold dessert for my little boy since he liked it so much, I'm pretty certain that it will taste even nicer! :)

Want some Variety?

  • Subsequently I made a Pumpkin Steamed Egg with Milk, tasted really nice, highly recommend you to give it a try!

  • Other substitutes you can used instead of banana or pumpkin: Broccoli stems, asparagus, fresh orange, sweet potato, peaches, button mushrooms. When I have the chance to try them will post the update.

  • What milk? Some asked. I used Pura Australia fresh milk here, however I believe breastmilk will work as well. If any breastfeeding moms had tried using BM to make this dessert, please do share with us here and I'll most certainly upload the photo to share with others!



  • Do take note that....
    Some infant may be allergic to egg (especially egg white), so it is not recommended to serve egg to little ones under 1 year old. Watch out for allergic reaction such as rashes or itchiness if this is the first time you are offering egg based food to your little ones.

    Toasted Banana Wrap 烤香蕉卷


    This is such a simple breakfast that in fact no recipe should be needed. It's perfect for a rush rush morning. I made this for little one's snack box to school.

    Simple breakfast


    Preparation Time: 2 minutes
    Cooking Time: 10 minutes
    Serving for: 2 toasts


    Ingredients:
    2 pieces of wholemeal bread
    2 ripe banana
    Generous amount of Nutella spread
    A few toothpicks

    1. Preheat oven at 160c.
    2. Lay out the bread on baking tray, spread with a generous amount of Nutella spread, follow by a banana on the edge of the wrap
    3. Roll the sausage with the bread from the edge towards the other end. Use 2 toothpicks to hold the bread together to form a wrap.
    4. Bake in oven (medium rack) for 10 minutes.

    Remove toothpicks before serving. Taste best when served warm.

    Hot from oven, smells do nice...

    Easy Almond Banana Toast 杏仁香蕉土司


    This is a sweet savory suitable for nearly all ages.

    We went to a nearby cafe for breakfast one weekend and I had an almond banana dessert. It looked rather simple and I thought I can try making this at home.

    So I did and it turned out great. We had a warm breakfast served with brewed coffee for big ones & hot chocolate for little one at the comfort of our home. The total cost was only around RM10 (include drinks) but the stress-free family time was priceless. :)



    Preparation Time: 10 min
    Cooking Time: 8 min
    Serving for: 2-3 persons

    Ingredients:
    4 pieces of sandwich bread, remove the brown edges if you like
    1 large ripe banana, cut into slices
    Some almond flakes
    2 table spoons of honey (I used Manuka honey)

    Step-by-Step Guides:
    1. Preheat the oven at 160C/180C (gas/oven).
    2. Place the breads on a baking tray with some space in between, arrange the banana slices neatly, sprinkle with some almond flakes and follow by drops of honey.
    3. Bake the bread for 8-10 minutes. Let it cool before serving.

    The toasts came out really crispy and filled with natural sweetness, thanks to the honey and banana. Both honey and banana are ideal for easing constipation problems, I made this for Ethan after he had not passed motion for 2 days and the problem was resolved the very same day.

    Useful Tips!
    1. Include some prunes onto the toast if your little one has constipation problem, it adds sweetness and fiber too.
    2. Some people may be allergic to nuts, if this is the first time your little one is having almond, do watch out for allergic syndrome, such as skin rashes, nappy rash.

    Frozen Chocolate Banana Popsicle 巧克力香蕉冰棒


    Banana is easily available in Malaysia and all of us at home loves it. Problem is, it ripe too fast, often turns bad before we can finish the entire bunch.

    Instead of throwing the over ripe bananas away, I made the excess ones into Popsicles. It's delicious and no extra sugar nor flavoring required. It's a dessert suitable for all ages! ;)

    Frozen Chocolate Banana Pops on a sunny afternoon... nice!

    Preparation Time: 15min
    Waiting Time (freezing): 15min
    Serving: 6 persons
    Approximate Cost: ~ RM12

    Ingredients:
    3 large bananas, remove skins & cut into half. Poke on Popsicle sticks.
    1 table spoon of olive oil
    200g of unsweetened / semi-sweetened chocolate

    For Decoration:
    Roasted almond nibs
    Chocolate Rice

    Step-by-Step Guides
    1. Preheat the oven at 160c/180c (gas/fan). Prepare a tray with a layer of baking sheet.
    2. Poke the cut bananas onto Popsicle sticks and freeze them for 10min (so it's easier to work on)
    3. Cut the cooking chocolate into smaller cubes, melt them in the microwave on high heat for 3 min. Add in the olive oil to avoid it from clogging up.
    4. Spread up the almond nibs on a tray, bake in oven for 5min.
    5. Dip the frozen banana Popsicle into the hot chocolate.
    6. Sprinkle roasted almond nibs, chocolate rice onto the popsicle; Rest the coated banana stick onto the prepared tray.
    6. Freeze the tray of banana popsicle for 15min. Ready to serve!

    The frozen Popsicles is good to keep for up to a week.

    Useful Tips!
    1. if you are working a bigger batch, heat up the chocolate in batches as the melted chocolate may thicken up if left exposed for too long.
    2. If you are having a party, cut the bananas into bite size - about 1" wife each. You have a pretty impressive looking frozen banana dessert (see pictures below) to wow your guest!
    3. Some kids may be allergic to nuts. If this is the first time your little one having almond, do watch out for potential allergic symptom, such as rashes.
