Melt-in-your-mouth Butter Cookies 即融牛油曲奇

I had no intention to bake for this Chinese New Year initially, as I wanted to focus on my family and career plus to have a little extra time for my midnight sewing. But since it's long holiday thanks to Thaipusan and Federal day in the city I live, I have 4 days of off day. Since I have completed my CNY seeing wish list for my little girl, why not bake some goodies? 

I made few varieties of butter cookies this time. Nothing fancy (I know sheep cookies is an Internet phenomenon..), but these little muchies are really melt in your mouth kind of soft and my little ones are loving them. I'm sure they are suitable for old folks too which make them perfect CNY gift!






Here's how...

Ingredients:

Preparation Time: 30 minutes
Baking Time: 12-15 minutes 
Serving: about 40 cookies each recipe

Original Butter Cookies
• 130gm Unsalted butter at room temperature, cut into cubes 
• 190gm super fine flour
• 10gm corn flour
• 50gm icing sugar (reduced from 70gm)
• 50gm/2 medium eggs, beaten
 
B) Chocolate cookies
• 130gm Unsalted butter at room temperature, cut into cubes
• 180gm super fine flour
• 10gm corn flour 
• 15gm cocoa powder
• 50gm icing sugar (reduced from 80gm)
• 50gm/2 medium eggs, beaten


The Making:
1. Sprinkles some flour over a baking tray, set the oven to 180°c.

2. Using a mixer, mix butter with the sugar on high speed until turns pale and fluffy.

3. Slowly add the egg liquid into the mixture and mix well, followed by the flour (add in few batches). You may add the green tea / cocoa powder now.

4. Once the mixture is well mixed, scope them into a piping bag, pipe them onto the tray to form a wreath shape, or any shape as you wish.

5. Bake for 12-15 minutes until the cookies is golden brown.

Let cold and store in airtight containers. These cookies shall be good to keep for 3 weeks.


我家小瓜超爱吃牛油饼干,我原本没打算烘新年饼干,但反正有几天的假期,就给烤炉热一热吧。

超容易但超好吃的,要管成花圈状 (丹麦饼干就是这个卖相!)也行,简单的球状也行,就随你意吧。

A)原味牛油曲奇
•130gm无盐牛油(室温),切成立方体
•200克超细粉
•70gm砂糖
•50克/ 2中型鸡蛋,搅均


B)巧克力牛油饼干
130gm无盐牛油(室温),切成立方体
•180gm超细粉
• 10gm 粟粉
•15gm 可可粉
• 80克 糖粉 (我减至50gm)
•50克/ 2中型鸡蛋,搅均

做法:
1.撒一面粉在烤盘上,将烤箱预热至180℃。

2.使用搅拌机,用高速搅拌奶油与糖,直到奶油发白和蓬松。

3.慢慢将鸡蛋液加入混合物,拌匀后再加入面粉和粟粉您现在可以在此时添加可可粉。

4.把混合物舀到piping管袋,管成花环形状。

5.烘烤12-15分钟,直到饼干呈金黄色即可取出。

待冷却后,存放在密闭容器中。这些饼干可以存放约三周。

Feeding Essentials for Little Ones, From 6 Months to Toddler Age


I have been sharing quite a number of recipes for little ones, this time let's talk about the feeding utensils to use for little ones, from 6 months old to toddler year. The principles that I subscribed to are simple:
  • Buy only items that are reusable, good quality and that are safe for toddler - non toxic, BPA free, no sharp edges.
  • Go for practical design with reasonable price, buying the most expensive of the range or branded imported products may not make one a good parent automatically; instead, invest in getting quality food or ingredients.   
It is a mixer of fun and painful experience for new parents when it comes to introducing food to the little ones, especially if you have a picky one. Hopefully this articles helps to give some pointers on what are the essential tools to spend on for this journey so at least it would not be a pricey one. :)




The Beginner 
6 Months - 18 months old

At this stage, the little ones are exposed to solid food for the first time and in the first few months, they spend more time exploring their taste buds and rely mostly on the parent or caretaker to spoon feed them. Nothing fancy required, just practical tools that make feeding a mess-less chore. 

Essentials: 
• Feeding spoons
• Bowls & Container
• High Chair
• Bib
• Food blender

• Feeding Spoons
I like Take & Toss for the no-frill, practical design, and the length & width are just nice fore the little mouth. While there are a lot more fancy choices such as spoon that changes color according to temperature but I find it, errrr... a bit of an overkill. You can easily check the food temperature by touching the bowl or test a drop on the back of your palm, the most basic method will do. When the the little ones moved into next step where they are ready to self feed, the length of these spoons and forks are just ideal. You can even retire them as the cooking toy (masak-masak) when the little ones grew out of them.

• Bowls & Containers
I like these reusable Snack cups that are BPA free, microwave safe, dishwasher safe, freezer safe and can double as storage box for rice cereals, porridge or cut fruits. I used these a lot and each one is just perfect for single feeding.

When traveling short distance, you can put the frozen purée in these storage containers and place in a cooler box. When feeding, thaw over a bowl of hot water and you can feed directly from the storage container. Really convenient and mess free.



• Bibs
You may opt for cute little cloth bibs that are absorbent and made little ones looking so adorable, but they can be quite difficult to clean to have all the food stains removed. While these are simply too cute to resist, I would recommend to use them for teething purpose (the nonstop saliva and drool!) and to spoon feed little ones, not when they started self feeding (unless you don't mind all the washing...)


When little ones started to self feed, I would recommend these soft plastic bib that comes with pocket at the bottom (ideal for catching dropping liquid). You may choose the thick plastic or the soft foldable type which I find is more practice - can easily rolled up and pack in the nappy bag.

You may even opt for a cover-all wear on bib, personally I find it not so practice for our tropical weather that is super hot and humid. So never venture into that...

Conclusion? The choices are aplenty in all the baby stores, just choose wisely. After all only need the bib for first year of feeding. 


• Baby High Chair
For high chair, we went with something practical - IKEA high chair that almost 1 in every 5 young family would have one at home. 

We had one for 5 years and still look new as the first day we bought it. It's easy to clean, practical, and we personalized it by using different stickers - with one of our little ones' favorite Disney characters, Jack & the Neverland pirates.

We got another portable high chair for traveling purpose - Fisher Price Portable High Chair. It is light weight, easy to clean and can be folded into a box size with a handle so is truly portable. I like that the tray comes with a cover and can be removed for washing. The seat is adjustable to suit different heights so we can actually use this unit for our little ones from 6m+ up to 2 years old.




• Food Blender
Between 6 to 8 months, the little ones still require intake of mushy food such as purée or soupy food, so you may need a blender to prepare the purée or cereal. While there are many baby food processors available in the market nowadays, I would recommend for a conventional hand mixer. My favorite thus far is the Moulinex Hand Mixer with multiple foots that allows it to blend, mince, crush ice and emulsify. It is easy to clean and only requires minimal storage space.



While a special designed baby food processor may help to reduce the preparation time. You only need it for few months, subsequently the little ones may prefer semi-solid or solid food such as noodles, rice, congee etc, which doesn't require a blender anymore. While the conventional hand blender will remain an useful addition in your kitchen, a baby food processor on the other hand, may be redundant. (I stand corrected on this, but I really like my hand mixer which I am still using till to date).



The Wobbly Years  
18 months - 3 years old

This is the stage to start introducing self feeding (I started my girl at 13 months, it really depends on the little one's readiness), so it is important to provide cutlery sets that are easily manageable by the little ones and are attractive in design to capture their interest.

Essentials at this stage:
• water proof bib with pocket
• spoon & fork
• food scissor
• snack box & storage box
• plate & soup bowl

• Toddler Food Scissors
Get a pair of round tip scissors with cover, can use it at home or when visiting restaurant, it can be handy with noodles, pasta, meats or vegetables. You can easily find a pair of such scissors from stationary stores, we got ours for only RM5. 



Toddler Cutlery Set
Opt for plastic cutlery set that are BPA free, one with wide bottom so less chance of spillage. We have been using these IKEA Smaka bowls and they serve the purpose well.

Suggest to opt for plain color that are vibrant and captivating.


Placemat
Get some cute looking placemats. Besides looking cute and keeping the little ones interested, a placemat also helps in "damage control" - don't underestimate the level of messiness when you decide to let little ones self-feed. ;)

The Confident Toddler 
3 Years Onward

By now, little ones shall be well trained to self feeding and can confidently dine with little assistant from the adults. 

The essentials at this stage:
• Solid spoon, fork & knife 
• Plate & soup bowl
• chopsticks & chopsticks trainer

• Foldable Cutlery Set
Our favorite choice when going out with the kiddos has got to be these FUEL foldable cutlery sets. Trendy, easy to store (just fold it!), and very practice design. The handle offers good grip for the small hands and the size of the cutlery are just nice for the little mouths.

We got ours when traveling in Australia few years back, nowadays we often see Fuel cutlery sets available in major departmental stores such as Parkson.


Different colors for easy differentiation. I made a cutlery pouch for storing the sets for the siblings.




Toddler Trainer Chopsticks 
We usually dine using chopsticks when serving Chinese dishes or noodles. Little ones are curious to try out the chopsticks so this trainer set comes handy, this bunny chopstick holders which can easily cap onto any chopsticks. It helps the little fingers to learn holding and grip onto the food, which is a good form of fine motor training for the little fingers. Our little boy is able to use his chopsticks well after few meals with the help of this bunny trainer. :) 
You can easily find these chopsticks trainer in home improvement or departmental stores.

There are many other items and appliances that baby stores may offer and one may be enticed to purchased, I am just listing what are the essential based on my personal experience. So just be a wise consumer and spend wisely. ;)
Do note that the suggested stages above may differ for your little one as not every child has the same development path. There is no need to compare your little one with others (unless there is a real reason to concern on the progress), just need to have some patient to guide them and enjoy the journey which contributes to the overall parenthood experience.

Managing a Picky Eater... Useful Tips for the Parents! #PediaSureMY



Recently I was invited to participate in PediaSure® Complete Liquid with Elite Formulation programme with my 5yo, where I was among the few bloggers who had the privilege to listen to the talk on nutrition by the child consultant pediatrician, Dr Chin Wai Seong, and the Medical Director of Abbott Nutrition, Dr Shaalani Ramachandran, who is a beautiful mother of 2.

Dr Chin runs Dr Chin'd Child Specialist Clinic in Kepong and ABC Child Specialist center in Bandar Utama. He is also among the few doctors who are certified by IMFed, an organization with the mission to ensure children are getting sufficient nutrition through right diet intake. 

A few take away that I got that day, first hands through the specialists.

#1 Generally there are 4 categories of picky esters: 
  • High selective in food intake
  • Fear of eating 
  • Very active but eat little
  • Poor appetite in child
If your little ones fall under the category of a picky eater, perhaps you may want to find the cause and the right ways that can help to make him/her be less fussy with food, or at least, increase the food intake.


#2 How to Tackle Picky Eaters?
  • Make use of their curiosity. Do not offer the food directly to the little ones. Instead, parent starts eating the food and only share with the little ones when they ask for a try. I have used this tactic on my little girl several times and it had never failed to work. :)
  • Let hunger speaks. Avoid serving snacks before meal time, when the kids get hungry they will want to eat. It's human instinct to seek for food when in hunger, if the little tummy is filled with food / snack, that "alarm" for food may not get triggered.
  • Burn their energy. At such tender age, the little ones have lots of energy to burn and it is only normal they remain active during meal time. So, invite them to play outdoor - run, kick, slide, jump, hop, skip, spin, dance etc before mealtime (and you get to burn some fat too! ;) When it comes dinner time they will be less active and able to finish the meal without creating a huge mess. Just imagine they are like the bunny powered byenergizer battery   (it's a popular ad when I was a kid!) - the bunny clapped fast and nonstop when battery was full, but as the battery depletes, bunny slowed down and eventually stopped. Kids are just pretty much just like the bunny!
  • Make use of visual impact. Serve the food (especially vegetables) in different presentation that is more enticing to the little ones. If they don't like big cubes, cut the veggie into strips, star shapes, geometrical shapes instead. Of all you know a little change of presentation may makes a lot of different.
  • Avoid Interference during mealtime. Turn off the TV, iPad, smart phone... let the little ones (and big ones) focus on eating the meal without distraction or having someone to constantly spoon feed. Use cutlery sets and bibs designed for toddler so they can learn proper table manners as they eat and at the same time get to work out their motor skills.

And here are my views.. 
  • Starts young - introduce a variety of food to the little ones since young avoid possibility of a picky eater in later stage, when they had been exposed to variety of taste, they will not find the particular food 'alien' to their taste buds.
  • Involves the little ones in the food preparation, such as washing veges, setting up tables, or some simple chores. The kids feel involved and motivated to eat the food they help prepared.
  • Let mealtime be enjoyable. We often do casual chat and share jokes during mealtime, our duo have their designated seats - little one on her IKEA high chair full of Disney stickers and elder boy has a high stool so he can eats at same level us, using their favorite placemats, BPA-free plastic bowls and cutleries. So they feel like they are part of us and at the same time get to learn table manners by us being the role models. When they finish their food we will give praise, like "look, E had ate up all the noodles without needing help, good job!", or, "C, you ate all the broccoli in your plate? I'm so proud of you!". Don't underestimate the power of encouragement, my duo often race to finish their mealtime nowadays. I recall Dr Chin shared the same message too, so we are definitely on the right track.. :)
  • Don't let meal time be stressful time. While I believe in teaching the little ones table manners, we shall also discourage scolding, forcing, or yelling during the mealtime which may lead to dislike or fear of meal time. Instead, offer them the child friendly utensil and let them learn to eat at their own pace & experience with the food. Touching, poking may be just one of the toddlers' way of learning his surrounding and his food in the early stage, it maybe messy (compare to having someone to spoon feed), but it's part and parcel of the learning experience. 

#3 Use the Right Assessment

One important point that I managed to clarify with Dr Chin - apparently there are different children growth chart for Asian, Western or Canadian healthy organization. It is only right to determine a child is under or over develop using the correct chart, instead of giving yourself unnecessary stress. Besides, there is an assessment toolkit provided by IMFed (short for Identification and Management of Feeding Difficulties), that aims to help pediatrician to correctly identify and manage picky eating habits among young children from 1 year onward, hence providing age-appropriate nutrition recommendation.

About The PediaSure® Complete Liquid with Elite Formulation Programme

Now, back to the programme. I have signed up my little Captain E for the PediaSure Complete Liquid programme, where he has been drinking 1-2 bottles of the supplement drink daily for past 3 weeks (now entering the end of 5th week as this is a very much delayed due to my busy work schedule...)



The drink is mainly designed for children age 1-10 who are picky eaters. It contains over 20 types of plants-extracted vitamins and minerals, and it is gluten-free, dairy-free, glucose-free, which makes it an ideal supplement drink for children with allergy to gluten, milk-based products, lactose intorelant or those who are experiencing diarrhea or food poisoning, where intake of diary products shall be avoided.


So, What's the verdict after 3 weeks trial?
To begin with, my little handsome is not a picky eater, he eats most of the food we prepared with exception of garlic and onion (which I often mixed into fried veggies / rice / patty so he doesn't even notice). I didn't signed up for my girl as she has great appetite and she eats almost anything, and she has been rather strong build for kids her age.  


• GROWTH 

At 5 years old, my little captain is 116cm and weigh 22.5kg, so he is considered rather tall according to the Asian children growth chart. There is no significant weight gain after the 3 weeks consumption, however I do noticed improve of appetite. He is eating a much bigger portion for his meal now and he will proactively ask for dinner stating that he's hungry. So if you ask me, this is definitely a good improvement. Imagine I used to face his question like - "do we have to eat now? I want to play"... Instead of now having him coming to me and says - "I am hungry, what's for dinner, mommy?"

Good change indeed huh. :)

One of the PediaSure supplement benefits is that it improves immunity. However my little captain rarely fall sick since he passed 4 years old, at most some fever but even that he recovered rather quickly. So I am not able to tell the extra benefits of immune booster by this supplement, he remains healty and active as he entered 5th consequtive week of consumption now.


• TASTE

As for the taste, I took few sips and I liked the vanilla taste, it's not too sweet and my little captain liked it too. On the other hand, my Princess C was not too fond of the drink unless I add some Choco powder into it, she is definely chocolate drink lover, probably mommy's gene is too dominant in her (me too is a chocolate monster.. ;)

However, according to Leona Lim, the new blogger friend I met at the event, her 5yo who usually only takes chocolate drink likes the vanilla flavor too and has been consuming it daily  (although he still prefers chocolate flavor if there is a choice, lol). You may check out Leonal's post here.

Note: PediaSure currently only offers vanilla flavor in Malaysian market, however chocolate flavor is available in Singapore.


PACKAGING

Now, this is something worth mentioning. PediaSure uses BPA-free containers with screw on cap and aluminum foil seals to lock in the nutrition and reduces risk of contamination. The screw on cup makes it really convenient to bring for outing or pack into the school bags - no fear of leakage or breakage. Besides unfinished drink can be kept refrigerated up to 24 hours for later consumption (as informed by the PediaSure reps), anyway my little captain always finish the entire 8oz bottle in one serving, which is equivalent to 260ml. My baby C, on the other hand, only takes about 6oz milk so I would have to chill the remaining portion before serving to her later.

Besides, the plastic cap allows me to make marking with his name, in case it got mixed up with other preschoolers. I had so much fun decorating the cap each day, see what I've doodled here :)




He actually looked forward to the new bottle each day, since each doodling only took me 1-2 minutes, I really don't mind. :)


So, to sum it up..
This is my little ones' first time trying out PediaSure supplement, it changes my perception that it is only for the underweight, in fact it can be introduced as a daily supplement drink and alternative option when little ones are unwell or low appetite to ensure they have proper nutrition intake. 

So, will I continue to offer this drink to my little ones? Most probably, but may be on reduced frequency instead of daily consumption, and is definitely my ideal choice when going travel or picnic.

Crispy Pumpkin Seeds & Almond Flakes Cookies {CNY Special!} 南瓜花籽杏仁脆脆饼

It's CNY! Time to have some healthy snack that is not so high in sugar so can munch on without much guilt. 

I had been really busy spring cleaning, sewing after work and on weekend that I can hardly find time to bake any CNY cookies apart from the almond biscottis which almost finished up by now, I decided to do last minute baking on the CNY eve, just stole 30 minutes from the spring cleaning and finished up this last minute baking.


This is a super simple yet addictive snack you won't want to miss, besides, I can guarantee any kiddos would love this snack. :)

I made 2 flavored - Crispy Pumpkin Seed Cookies and Crispy Almond Flakes Cookies, either one they tasted great!







On the next weekend, I spared 20+ minutes and made these yummies again, this time using Lotus seeds, left over from my snow skin mooncakes.



This glass jar I bought from IKEA is perfect to keep them air tight. Anyway the cookies were all grabbed up by that very evening they were baked. :)




Preparation time: 10 min 
Baking Time: 10-12min
Serving for: 1 baking tray (about 30 6cm x 3cm size cookies)

预备时间:10分钟
烘烤时间: 10-12分钟

Ingredients:
2 Large Egg White / 3 Mediun Egg White 两粒蛋白(大型) / 三粒(中型)
50gm all-purpose flour 50克普通面粉
60g castor sugar 60克白糖
30g butter, melted 30克融化牛油
80g Pumpkin seed / Sunflower Seed / Almond Flakes  80克南瓜种籽/太阳花籽/杏仁片

This is exactly enough for 1 baking tray, if you want to yield more just double the ingredient accordingly.


The Making:


1. Preheat oven to 170°c / 350°F, place a non stick baking sheet over the baking tray. Brush a thin layer of melted butter onto the baking sheet.


2. Whisk egg white in a mixer on high speed until stiff (or really fast if on hand mixer). Add sugar and continue whisking it till well mix .

3. Sieve the flour and butter into the egg mixture, fold in the flour slowly using a spatula (do not over mix)

4. Drop in the pumpkin seeds / almond flakes, mix roughly.

5. Scope the mixture onto the baking tray and spread it as thin as possible using a spatula, drop more seeds if you wish to ensure generous coverage. Bake for 10-12 minutes until it turns golden brown. The longer you bake the crispier it becomes.

6. Remove from oven and let cool on a wiring rack. Tear the baking sheet, break up the cookies carefully and you're done!

Now, keep them in airtight jar before your kids can get their hands onto the cookies, quick!

Look how thin it is. The thinner the better (I mean, for this cookie ;)


Useful Tips!
To ensure you can remove the baking sheet easily, spread a thin layer of melted butter or cooking oil over the sheet before pouring the mixture, you can tear off the baking sheet easily.

Steamed Egg with Minced Meat, Mom Style 蒸水蛋,妈妈拿手菜!

Some how I'm hooked on egg this week, so bear with me, will you? This is a dish that is suitable for 1 - 99 years old. :)

I liked this steamed egg since I was a kid, it is one of my Mom's best dishes. She's such a good cook that I thought it would be such a waste if I do not learn a few signature dishes from her while she's still in the mood. The steamed egg she made is always soft and smooth so I finally learnt the keys:

• right amount of water and egg
• control your cooking time
• beat your eggs to achieve fluffiness

Smooth steamed eggs, in few simple steps...


I added few drops of sesame oil before serving which is really optional.


It only takes no more than 10 minutes to prepare this dish, so if you are out of idea and in a rush to prepare dinner, this is a super easy go-to recipe.

Preparation Time: 5 min
Cooking Time: 5 min
Serving for: 4 person



Ingredients:
3 large eggs (size A)
3/5 cup of boiled water (a normal coffee mug, room temperature will do)
A dash of salt (I used sea salt)
A dash of ground pepper 
A dash of sesame oil
1/2 tablespoon of soy sauce
A palm-ful of minced meat, either pork or chicken (optional if you like just plain steamed egg)

The Making:

1. Marinate the minced meat with salt, pepper and soy sauce, mix well and set aside.

2. Heat up the steamer with sufficient  water. As you can see I used a traditional wok here, but you can use any other steamer set too.

3. Beat the eggs with water using a fork or whisk until fluffy, sieve the bubbles to achieve smoother texture if you wish. Add the marinated minced meat and roughly mix. Pour the mixture into a dish before entering the steamer. 

4. Steam on high heat and lid closed for 5 minutes. Test the steamed egg with a fork, it should be firm when the fork is inserted. If its still watery then steam for another minute.

The dish is best when serve warm, dig in and enjoy the warm steam eggs. 

I dropped a few spoonful of the steamed eggs into my little one's rice and the duo enjoyed smashing it up, pretending they were playing the disappearing act of a magician. Served them along other veggies and we have a yummy healhty meal. 


Useful to Know..

Make sure your watch the water to egg ratio. If you used up to 5 large eggs then pour a full mug of drinking water. The size of the eggs does matter here if you want to achieve the right consistency.

• When serving to infant under 2 year old, you may spare the soy sauce and use the salt sparingly. Besides, make sure you watch out for allergy to egg if this is the first time serving eggs to your LO.
