Homemade Noodles, again 手工面条做法加食谱
The handmade noodles I made 2 weeks ago had ran out, so I thought its time to make a new batch, but using a pasta maker this time as I would prefer the noodle to be thinner.
It was a right decision, the noodles turned out way better this time.
I made different flavors this time:
Green noodles - Baby Kai Lan with egg
Orange noodles - Carrots
Yellow noodles - Pumpkin
Purple noodles - Red cabbages
This time, I let my little chef helped up since he was so interested with the pasta maker. In fact, he self invited himself when he saw me working on the dough. Pulled out the apron and washed the hands, then told me he's ready to help. He has certainly made significant progress! It requires quite some strength to turn the handle but he did a pretty good job.

The flat noodles, as thin as 1mm.

Fold them into serving size before storing.

Tips:
I added a few pinch of flour into the noodles and mix well before storing. This is to ensure the they will not stick together.

Mixed Flavor Noodles with Minced Chicken
Preparation Time: 5min
Cooking Time: 10min
Serving for: 2 bowls
Suggested Age Group: 1 Year onward
Ingredients:
1 chicken fillet, minced, lightly salted
A palmful of homemade noodles
1 teaspoon of homemade anchovies powder
Step-by-Step Guides:
1. In a pot of boiling water, add the minced chicken and cook for 2 minutes. Add the anchovies powder and stir to mix well.
2. Add the noodles, make sure you spread the noodle out or they may stick together.
3. Let the noodle cook for 3 minutes, and its ready to serve.
The cooking time may vary depending on the texture of your noodles, so check out using a fork and use your own judgement.
Stir Fried Pumpkin noodles in Pumpkin purée
Preparation Time: 5min
Cooking Time: 10min
Serving for: 2 bowls
Suggested Age Group: 1 Year onward
Ingredients:
2 cloves of garlic, chopped
A palmful of homemade noodles
1 teaspoon of homemade anchovies powder
1 table spoon of homemade pumpkin purée
Step-by-Step Guides:
1. Heat up a table spoon of olive oil, add some chopped garlic and sauté till fragrance.
2. Add the noodles, spread them out. Stir fry for 3 minutes, sprinkle with some water and a teaspoon of anchovies powder to taste.
3. Remove from stove. When serving, add a table spoon (or more) of pumpkin purée, sprinkle with some sunflower seeds or some meat floss (only if serving for elder kid > 2 yo or adults), serve immediately.
