Creamy Cheesy Multi-Colors Alphabet Pasta 芝士蔬菜意面

Now that baby has past 1 year old and confirmed no allergy reaction with cheddar cheese and Parmesan cheese, I am serving her creamy cheese pasta instead of the usual soup pasta. I love the cheesy smell and the creamy taste of this little pasta... When I was cooking it in the kitchen, even my little boy couldnt resist to ask for a try..



I used four different types of vegetables here for the mixed nutritious, you can replace with vegetables of your choice, but do try to maintain the variety of colors.



Preparation Time: 5 min
Cooking Time: 10min
Serving for: 2 servings 

Ingredients:
1 palmful of organic alphabet pasta
(White)1/4 of onion, finely chopped
(Red)1/4 of capsicum, finely chopped
(Green)1 long beans or broccoli, finely chopped
(Orange) 1 thumb size carrot, finely chopped
1 table spoon unsalted butter
1 table spoon of shredded cheddar cheese / Parmesan cheese 
1/2 teaspoon of anchovies powder (optional,  this is for added calcium)


Step-by-Step Guides:
1. Cook pasta in a pot of boiling water for 5 minutes, remove, drain the excess water and set aside.

2. Melt the unsalted butter in a hot pan, add the chopped vegetables and stir dry for 3 minutes. Toss in the pasta and follow by a dash of water. Cook for another 5 minutes on medium heat. Add the anchovies powder (optional).
3. Add the shredded cheese, let it shimmer for about 1 minutes then turn off the heat.

Wa-la... The pasta is now ready to serve. 

This pasta, before adding the cheese.


If there is any extra, you may keep the remain portion in a thermos, it can keep warm for about 6 hours. Just remember to rinse the thermos with some hot water before you store the pasta, this will prolong the keep warm feature.
